本系前身為陶瓷材料系， 92年本校改制為一般大學，本系亦更名為材料科學工程學系，除增聘金屬、半導體、高分子及奈米材料等師資，充實課程內容，更加強學生理論基礎學習。稟承實作教學的傳統，配合時代潮流與產業發展所需，本系的教育目標為訓練理論與實作能力兼具的材料科學（工程）人才，提升材料科技之研究，並藉由設備、教材、實驗內容的逐年更新購置及教師增聘等方法，改善學生的學習環境及內容，使本系成為基礎科學與先進科技兼具的優質學系。

本系教育目標之依據聯合大學及理工學院之教育目標，並參酌中華工程教育學會工程及工程教育認證規範 (EAC 2010)精神來制定，除了考慮原有的傳統，並兼顧時代潮流、社會需求、學校軟硬體設施、及教師研發領域等因素，其過程：(1)本系組成工程及科技教育認證工作小組，搜集國內外各大學材料相關系所之教育目標，考量本系特色、未來發展及定位，擬定教育目標草案，(2)草案經由多次系務會議討論，由全體教師核定草案內容，(3)將教育目標草案郵寄系務諮詢委員審閱，並召開系務諮詢委員會議討論教育目標內容，彙整委員意見修改教育目標內容，再經由委員確認，(4)將擬定教育目標送交本校IEET工程教育認證工作會議中確認，(5)由本系全體教師在系務會議中討論修正通過後公佈。系諮詢委員由產業界、學術界、研究單位的先進，及本系畢業系友及學生家長所組成。經過多次系務會議、IEET小組會議、及諮詢委員會議，所訂定完成之本系教學目標，現已成為本系老師之依據，並設計課程教授學生，未來將從執行中不斷修正以期獲得更好的成果。

大學部教育目標
 
  1. 材料知識傳授及技術訓練
    教導材料科學與工程之基本原理及專業知識，並訓練具統合性瞭解及兼具實作能力的高素養學生。
    Provide a solid foundation in the fundamental and professional knowledge of the field of materials science and engineering, and educate highly valued materials science and engineering students.
  2. 系統化靈活思考與創造力的啟發
    應用專業與統計分析知識，培養學生具備材料評估、分析及創新能力。
    Provide an education that allows students to have the capabilities of evaluation, characterization, and innovation creativity of materials engineering systems to serve society.
  3. 溝通能力的養成
    培養學生具有本國及外國語言、文字的溝通能力。
    Prepare students to communicate effectively, oral and documentation.
  4. 團隊合作與使命感的培養
    培養學生正確團隊工作倫理與社會責任的使命感。
    Prepare students to have team work ethics and social responsibility.
  5. 人文、永續及國際觀的開拓
    鼓勵學生開拓視野與吸收新知，培養永續發展的思維，成為具國際視野與競爭力之科技人才。
    Provide an environment that allows student to expand their views and knowledge on technology and to become globe professionalisms with highly competitions.
碩士班教育目標
 
  1. 培養專業素養與應用技能
    教導材料科學與工程領域之基本原理及專業知識，訓練對材料的結構、性質、製程及性能有統合性瞭解兼具實務能力之高素養學生。
    Provide a solid foundation in the professional knowledge and applied technology of the field of materials science and engineering.
  2. 培養獨立思考與研發能力
    培養學生具備獨立思考、研究並對材料具有評估、分析及創造之能力。
    Provide an education that allows students to have the capabilities of independent study.
  3. 培養專業倫理與持續學習
    培養學生具有專業之倫理觀念以及持續不斷自主學習精進之能力。
    Prepare students to have capabilities of team work and management.Prepare students to have professional ethics and continuous learning capability.
  4. 培養團隊合作及統合能力
    培養學生正確團隊工作倫理與對工作、社會責任之使命感，並培育團隊工作中合作統合及管理之能力。

    鼓勵學生開拓視野、吸收國內外相關新知，成為具有國際視野之科技人才，並培養熱心社會服務精神。
